These delightful cheesy garlic rolls feature a soft, smooth dough filled with a savory mixture of roasted garlic, sun-dried tomatoes, marinara, and herbs, topped with fresh mozzarella. They are perfect as an appetizer or a snack.
Dissolve 2 1/4 tsp active dry yeast and 1/4 tsp sugar in 1/4 cup warm milk. Stir to combine and let it rest for five minutes. In a separate bowl, combine 3 cups of all-purpose flour, 1/4 cup sugar, 1 tsp salt, the dissolved yeast mixture, and 2 eggs. Mix with a dough whisk or use a stand mixer to form a rough soft dough. Now add 6 tbsp room-temperature butter and keep mixing. Knead till you see a smooth dough. Cover the dough bowl and let it rise at room temperature till it doubles in volume. Then punch the dough down, shape it into a ball, and place it in the refrigerator for a few hours or overnight. Refrigerating it helps with easy shaping.
For the filling, combine 1 roasted garlic head, 1/4 cup sun-dried tomatoes, 1/4 cup thick marinara sauce, 1/4 tsp dried oregano, chili flakes, and black pepper. Add to a food chopping bowl and chop it till it becomes a coarse mixture.
Take the dough out and transfer it to a well-floured work surface. Roll the dough out into 1/2 inch thickness. Cut out rounds from it and start putting the filling and fresh mozzarella on it. Close the dough edges and seal them tight so the cheese won’t ooze out. Fill and shape them all. Arrange them one inch apart on a greased baking dish. Brush their tops with egg wash. Let them rest for 15 minutes, then bake them in the preheated oven at 400 F until fully cooked, which should take around 18 minutes. Once done, brush their tops with melted butter and enjoy!
