Butter Float Skillet Biscuits (Yogurt Version)
30 mins prepServes 8
Tender and pillowy biscuits with crispy golden edges and a tender interior, perfect for pairing with various meals or as a brunch item. The recipe incorporates yogurt, cheddar cheese, scallions, and multicolored bell peppers.
1. Heat oven to 400°F.
2. Combine flour, salt, sugar, baking powder, and baking soda. Add yogurt to it and mix it gently (just a few strokes, no overmixing).
3. Add the shredded cheese, chopped scallions, and peppers to it. Combine gently with a light hand.
4. Heat your oven-safe skillet and melt half a cup of butter in there. Remove it from the heat and scoop out the biscuit dough into the melted butter pool. Spread them gently and insert some small oven-safe pots in there, to make indents for the eggs later.
5. Transfer to the preheated oven and bake for 20 minutes. Then take it out and remove the small pots from it.
6. Crack a few eggs in there and bake again for 8-10 more minutes.
7. Sprinkle the eggs with a pinch of salt and pepper and serve them at your weekend brunch or as a dinner side.
